Onions are first fried in oil until deeply browned, then water joins the pot and the rice cooks right in that golden water-oil mixture — so every grain comes out glossy, aromatic and sweet from the browned onions. Traditionally served with ground pepper, sardines or fried egg to top your way, and the prized crusty pot-bottom — known as Kanzo — is included with your order.
